Mediterranean Bowl

  • Ingredients:
  • 2 lbs chicken breast, cubed
  • Mrs. Dash Cavender’s Mediterranean seasoning
  • 1 cucumber, diced
  • 1 pint cherry tomatoes, halved
  • 6 asparagus spears, chopped
  • 1 small can sliced black olives, drained
  • 2 avocados, diced
  • Feta cheese, crumbled
  • Feta dip (from Aldi)
  • Olive oil

Instructions:

1. Preheat oven to 375°F.
2. Drizzle olive oil on a cookie sheet. Add cubed chicken and season generously with Mediterranean seasoning.
3. Bake for 20–30 minutes, or until chicken reaches an internal temperature of 165°F.
4. While the chicken cooks, prep your veggies: dice cucumber, halve cherry tomatoes, chop asparagus, and dice avocados.
5. Once chicken is done, divide evenly into four bowls.
6. Top each bowl with equal portions of the veggies and olives.
7. Sprinkle with feta cheese and add a generous dollop of feta dip.
8. Serve and enjoy!
